I'm such a slacker with this blog...
Allot has happened over the last while which I will have up just update when I can. Including Constance's 4th Birthday!!
I made such a yummy dinner I decided to share the recipe for all those soup loving people out there (aka Libby and Ethan)
Fresh Corn and chicken Chowder
12 oz. Skinless boneless chicken breast halves
4 Ears of fresh corn on the cob ( I used frozen and it worked great)
1 -32 oz Chicken broth
1/2 cup chopped green pepper ( I used Bell pepper)
1 Cup Milk
1 and 1/4 Cups Instant Mashed Potato flakes
Salt and Pepper to taste
crushed red pepper (optional)
In large pot over the stove combine: Broth, chicken, gr. pepper and corn. Cover and Bring to Boil over high heat. Reduce heat to and simmer 12 minutes or until chicken is no longer pink in the center. Remove chicken to a cutting board and shred the chicken with two forks. Add milk and potato flakes to the broth mixture. Return the chicken to the broth mixture. Salt and Pepper to taste and Heat through. Serve w/ crushed red pepper sprinkled on the top.
